Abalone is a type of Italian custard, where the egg is mixed with sugar and marshal wine and then it is "cooked" using the bain-marie (also called water-bath) technique. For those of you who don't know what it is I'll explain it in few words. Whenever you have very delicate food to melt or heat, like chocolate or eggs, take a small pan and put it in a larger pan. Fill the latter with water until it reaches half height of the small pan, then put it on a low heat. The food in the small pan will receive indirect heat and will cook or melt much slower. This is what we need to do with eggs, because they tend to coagulate very easily.
